Champagne, specially designed for the microgravity environment of outer space, has found its way to Earth orbit.
Maison Mumm, one of the world’s largest champagne producers, has entered into a partnership with the human space flight company Axiom Cosmos will release Mumm Cordon Rouge Stellar, “the first champagne bottle and tasting designed for space travel.” The bubbly will fly missions with the Axiom crew (opens in a new tab) starting in 2023 and will eventually be available on the company’s future commercial space station.

In development since 2017 and first announced a year later, Mumm Cordon Rouge Stellar (opens in a new tab) is now fully space flight certified by the French space agency CNES (Centre National d’Études Spatiales or National Center for Space Research) and also complies with the AOC Champagne regulations that confirm the integrity of the wine.
“Innovation has been part of Maison Mumm’s identity since 1827, and the Mumm Cordon Rouge Stellar is a great illustration of this,” said César Giron, President of Maison Mumm. “This project brings together the French knowledge of excellence in favor of the camaraderie that we hold so dear here. Mumm Cordon Rouge Stellar ensures flight safety and preserves its contents in a half glass bottle encased in aircraft grade aluminum and secured with a stainless steel opening and closing device. The top of the bottle, known as the “service,” consists of a long neck surmounted by a stopper and a ring—the latter holds the stopper and also serves as a lock for the stainless steel bottle mechanism.
In addition to the bottle, Mumm Cordon Rouge Stellar has also been designed with the differences in champagne tasting conditions in space in mind. Bubbles do not rise to the surface microgravitytherefore, they do not release the aromatic molecules that contribute to the wine’s flavor.
Instead, Mumm Cordon Rouge Stellar is sprayed into a foam that then coats the walls of the mouth. A special blend of Pinot Noir—Mumm’s signature grape variety—with wines produced over the past five years provides notes of ripe yellow fruit and grape peach, as well as dried fruit, hazelnut and praline.
“My aim was to preserve the freshness and power of Mumm Cordon Rouge and increase the intensity of its aromas with a longer aging and dosed liqueur made from wines aged in oak barrels,” said cellar master Laurent Frenet.
Mumm Cordon Rouge Stellar was flying on a “no gravity” parabolic flight., but to complete its development, it will be launched on a future Axiom Space mission. The Houston based company (opens in a new tab) recently signed an order with NASA for the second an astronaut’s private mission (opens in a new tab) (Ax-2) to the International Space Station, which is scheduled for launch in the second quarter of 2023.
Axiom also last week signed agreements with Türkiye, the Canadian Space Agency and Saudi Space Commission fly astronauts in future missions.
“In space, it’s very important to keep in touch with Earth and its culture. As a symbol of the art of living preserved in time, champagne has this universal appeal,” said Jean-Francois Clairvois, a French astronaut with the European Space Agency, which collaborated on Mumm Cordon Rouge Stellar.
