The innovative Danish company KMC, the first in the world, has managed to create a textured potato protein that can be used as an ingredient in meat of plant origin.

KMC speaks in Fr. press release The unique properties of potato protein are able to change meat products of plant origin with improved texture and nutritional value. The innovation is part of KMC’s strategy to find new uses for potato-based ingredients.

The plant market is on the rise and will grow significantly in the coming years. The modern consumer wants to reduce meat consumption, but he lacks the innovative options available in supermarkets that will help facilitate the transition to a plant-based diet.

The Danish company KMC has made a significant step towards the future on the basis of plant origin, as they have managed to turn extracted potato protein from a powdered ingredient into a product with a structure very similar to meat.

The development of potato protein is part of the innovative KMCs program, where they create plant-based ingredients that can replace ingredients of animal origin in food. KMC replaced 26,600 tons of animal ingredients in 20/21. Growth over the previous year by 13 percent. KMC aims to replace 39,000 tonnes of animal ingredients with plant-based ingredients in the 2024/2025 financial season.
